Jeep overheating? Kind of a weird question

I searched quickly and couldn't find anything, so please forgive me if this subject has been covered and I missed it.

So a few times now my Jeep (03 I6) has gone well over 210 degrees, but not when the Jeep is running. For example, today I drove home from work, temp gauge showed the Jeep just ever so slightly below 210 degrees like it always is, then I stopped at a store to get some beer. I came back out 5-6 mins later and when I started the Jeep the temp gauge was well over 210 but within a min went back down to 210. Air temp today was only in the mid 70's. I have the hydraulic fan as well as the electric and both are working properly. My questions are: 1, is the normal? and 2, is this bad for the engine/head?

I am assuming this is happening every day after I drive and then park in my garage but I just happened to notice because I only let the Jeep sit for just a few mins. Thoughts?
